When making pumpkin bread, ensure the recipe includes baking powder or baking soda as leavening agents. To prepare pumpkin bread, you will first need to make the pumpkin puree. Instructions:

3.) Prepare the Pumpkins: Thoroughly wash the pumpkins to remove dirt or debris. With a sharp knife, carefully remove the top stem portion. Cut the pumpkin in half vertically (from top to bottom). Use a spoon or an ice cream scoop to remove the seeds and stringy pulp. You can save the seeds for roasting if desired.


4.) Bake the Pumpkins: Place the pumpkin halves, cut side down, on a baking sheet lined with parchment paper or a silicone baking mat. Bake in the preheated oven for 45 minutes to 1 hour, or until the flesh is tender and easily pierced with a fork.

Pumpkin Bread Recipe


Ingredients:


  1. 1 ¾ Cup (220 g) All-purpose flour

  2. 1 tsp (3 g) Baking Soda

  3. ½ tsp (2 g) Baking Powder

  4. ½ tsp (3 g) Fine Salt

  5. 1 tsp (3 g) Ground Cinnamon

  6. 1 tsp (3 g) Ground Nutmeg

  7. ½ tsp (2 g) Ground Cloves

  8. ¼ tsp (2 g) Ground Ginger

  9. ½ Cup (115 g) Unsalted Butter, Softened

  10. 1 ½ Cup (300 g) Granulated Sugar

  11. 2 Whole Large Eggs

  12. 1 Cup (240 g) Pumpkin Puree

  13. ½ Cup (120 mL) Water

  14. 1 tsp (4 g) Vanilla Extract

  15. ½ Cup (60 g) Chopped Nuts (walnuts or pecans) or Chocolate Chips


Instructions:


1.) Preheat Your Oven: Set your oven to 350°F (175°C). Prepare a 9×5-inch (23×13 cm) loaf pan by greasing and flouring it, or line it with parchment paper for easy removal.


2.) Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Set aside the dry ingredients.


3.) Cream the Butter and Sugar: In another large bowl, cream the softened butter with the granulated sugar until the mixture is light and fluffy, which takes about 2-3 minutes.


4.) Add Eggs and Pumpkin Puree: Add the eggs one at a time, ensuring each is fully mixed in before adding the next. Then, incorporate the pumpkin puree, water, and vanilla extract until well blended.
